I scrapped !!!!

Not quite sure where or how I found the time, but I've actually done some scrapping in the past week !!

I did my pages for Tam's circle journal (her topic was Heartfelt Journalling). I got to use the font of my own handwriting for the first time too !! Here are my pages :

And I finished this layout I started in a class run by the lovely Miss Will a few months ago (yep, used the leftover paper for my CJ pages). For anyone who doesn't know, the dapper looking young man in the photo is my father-in-law, Chris (you didn't know I had that pic did you Dad ?? LOL).

-----------------------------------------------------------------------------------------------------

Oh...and I promised Miss Will the recipe for my Aunt Rosie's "Butterscotch Surprise Cake", so here it is :

Cake Ingredients
125 gram butter / margarine
3/4 cup caster sugar
2 eggs
3/4 cup plain flour
1/2 cup SR flour
1/4 cup milk
1 tsp vanilla essence

  • Cream butter and sugar
  • Add eggs, one at a time
  • Add sifted flours and milk alternately in small amounts until all combined

Filling Ingredients

1/2 cup firmly packed brown sugar
2 tbsp custard powder
1/2 cup milk
2 tsp butter / margarine
1 beaten egg

  • Combine sugar, custard powder & milk in a saucepan and bring to the boil
  • Reduce heat and simmer until the mix thickens, stirring constantly with a wooden spoon
  • Add butter / margarine and allow to cool for 5 minutes
  • Stir in beaten egg

To prepare cake

  • Grease and flour a ring pan
  • Put approx. half of the cake mixture into the pan and smooth out
  • Spoon butterscotch mix onto the cake mix
  • Put the rest of the cake mix into the pan on top of the butterscotch
  • Bake at 180 degrees for approximately 30-40 minutes
  • Allow to stand for 5 minutes before turning out
  • Can be served warm with cream or icecream as a dessert if you wish

YUM !!!
