I just made the yummiest, easiest dessert ever ! Even Elliot ate it, so that's saying something LOL.
Peach and pecan nut tarte tatin

Ingredients
2 tsps melted butter
¼ cup dark brown sugar
¼ cup pecan nuts, finely chopped
410g can peach slices, drained
1 sheet frozen puff pastry, thawed
Double thick cream, to serve

Method
- Grease a 20cm pie tin. Line base with baking paper and brush melted butter over paper. Sprinkle with sugar and nuts.
- Lay drained peach slices in a single layer on paper towel and pat dry. Stand for 10 minutes to remove excess moisture.
- Arrange peach slices in a single layer over base of prepared tin. Cut a 24cm circle out of pastry and place over peaches to cover. Tuck edge of pastry inside the tin.
- Cook, uncovered, in a moderately hot oven (190C) for 20 minutes, or until golden and puffed. Stand for 10 minutes before turning out of tin.
- Cut warm tarte tatin into slices and serve with double thick cream.
Tip: Tarte is best made just before serving. Mangoes can be substituted for the peaches.

O WOW that looks delicious! And EASY! I could do that! I will double check the ingredients, and I will make it sometime soon. And I will prolly eat it all myself ;) LOL
But i will let you know. Actually I need to go to the store sometime today or tomorrow, so maybe before this weekend!
